Frittata is a great way of filling up on eggs and vegetables without adding too many carbs to your meal. First of all roast or fry your choice of vegetables in a little olive oil. Good options include peppers, courgettes, squash and onions. Next beat four eggs with a tablespoon of milk and season well. Pittas are a cheap and healthier alternative to bread and useful to keep in the freezer for emergencies. They can be topped with just tomato puree if you are really low on time or if you have fifteen minutes then you can whip up a quick tomato sauce made with tinned tomatoes, onion, garlic and oregano (a pinch of sugar and salt too makes it extra tasty). To make this as healthy as possible, top them with more veg and less cheese. Anything you have in the fridge such as cherry tomatoes, mushrooms or peppers will work and even frozen veg such as sweetcorn. As for cheese you don’t need to fork out on mozzarella, just sprinkle a small amount of low fat grated cheese on top to finish them off. Scatter with a handful of mixed herbs and put under the grill or in the oven for five minutes. The result is a cheap, low fat and very easy meal which will suit the whole family.
Many people who are trying to cook on a budget worry about how to include fish in their diets when it can be so pricey. You’ll find that your best friend is now tinned fish; tuna, sardines, mackerel and even tinned salmon cost a lot less than buying them fresh and are hugely versatile. Start by boiling some potatoes and then when you mash them add a little flour and some tinned fish. Form the mixture into flat balls and cover in a little beaten egg and some homemade breadcrumbs and then fry for a few minutes on each side. Because the fishcakes already cover your protein and carbohydrate option all you need to do is add a salad, some veggies or even some baked beans and there you have another cheap, low fat and easy meal which suits even the fussiest of diners.
Each of these meals is low in saturated fats and costs just a few pounds to make, they can also be made in less than 30 minutes.
